Ingredients

  • 3 large Russet potatoes
  • 1 cup Fresh cilantro
  • 2 large Garlic cloves
  • 3 tablespoons Olive oil
  • 2 tablespoons Cornstarch
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Red chili flakes (optional)
  • 4 cups Neutral oil for frying

Directions

Step 1

Peel the russet potatoes and cut them into thin, even strips to resemble fries, around 1/4 inch thick.

Step 2

Rinse the potato strips under cold water to remove excess starch. Pat them completely dry with a clean kitchen towel.

Step 3

In a large bowl, toss the dry potato strips with cornstarch until evenly coated. Set aside.

Heat neutral oil in a deep frying pan or pot over medium heat to approximately 350°F (175°C). Test the temperature by dipping a fry; it should sizzle immediately.
