Ingredients

  • 1.5 pounds Boneless, skinless chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 cup Chicken broth
  • 1 cup Fresh cilantro leaves, chopped
  • 3 tablespoons Lime juice
  • 1 cup Long-grain white rice
  • 2 cups Water

Directions

Step 1

Season the chicken thighs with salt and ground black pepper on both sides.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear for 3-4 minutes on each side, or until golden brown. Remove from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1 minute until fragrant.

Stir in the ground cumin and cook for 30 seconds to release its aroma.
