Slice the chicken breasts into thin strips and place them in a bowl.
In a small bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of lime juice, half of the chopped cilantro, and half of the minced garlic. Pour this mixture over the chicken and marinate for 15 minutes.
Cook the rice noodles according to the package instructions. Drain and set aside.
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the marinated chicken and cook for 4-5 minutes until fully cooked. Remove from the skillet and set aside.
