Ingredients

  • 6 pieces Boneless, skinless chicken thighs
  • 1 cup Fresh cilantro, chopped
  • 1 cup Fresh parsley, chopped
  • 4 cloves Garlic cloves, minced
  • 1 medium Yellow onion, diced
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 1 cup Chicken broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Prepare the chicken thighs by trimming off any excess fat. Set them aside.

Step 2

In a small bowl, mix together the ground cumin, paprika, salt, and black pepper. Rub this seasoning mixture evenly over the chicken thighs.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until they are golden brown. This step enhances the flavor but is optional if you're short on time.

Step 4

In the crock pot, add the diced yellow onion, minced garlic, chopped cilantro, and chopped parsley. Stir to combine.

Step 5

Place the seared chicken thighs on top of the herbs and onion mixture in the crock pot.

Step 6

In a small bowl, whisk together the chicken broth, remaining tablespoon of olive oil, and lemon juice. Pour this mixture over the chicken in the crock pot.

Step 7

Cover the crock pot with its lid and cook on LOW heat for 4-5 hours, or until the chicken is tender and cooked through (internal temperature should reach 165°F).

Step 8

Once cooked, taste and adjust seasoning if needed. Serve the Cilantro and Parsley Chicken garnished with extra fresh herbs, alongside rice, mashed potatoes, or vegetables.
