  • 1 about 4-5 lbs Whole chicken
  • 2 cups Apple cider
  • 3 tablespoons Olive oil
  • 4 Garlic cloves, minced
  • 2 tablespoons Fresh thyme, chopped
  • 2 tablespoons Fresh rosemary, chopped
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 3 tablespoons Unsalted butter, softened
  • 1 Yellow onion, quartered
  • 2 Carrots, peeled and cut into chunks
  • 2 Celery stalks, cut into chunks
  • 1 Lemon, halved

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken dry with paper towels and remove any giblets if present.

Step 3

In a small bowl, mix together the olive oil, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper.

Rub the prepared olive oil and herb mixture all over the chicken, including under the skin and inside the cavity.
