Ingredients

  • 4 medium sweet potatoes
  • 1.5 cups apple cider
  • 2 tablespoons brown sugar
  • 3 tablespoons unsalted butter
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.5 cups dried cranberries
  • 0.25 teaspoons salt
  • 0.125 teaspoons ground black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes. Spread them evenly on a large, rimmed baking sheet.

Step 3

In a small saucepan, combine the apple cider, brown sugar, butter, ground cinnamon, and ground nutmeg. Set the pan over medium heat and bring the mixture to a boil, stirring occasionally. Reduce the heat to low and simmer for about 10 minutes, or until the liquid reduces slightly to form a glaze.

Step 4

Pour half of the cider glaze over the sweet potatoes, then season with salt and black pepper. Toss well to coat the sweet potatoes evenly.

Step 5

Roast the sweet potatoes in the preheated oven for 25 minutes, tossing once halfway through to ensure even cooking.

Step 6

Remove the baking sheet from the oven and sprinkle the dried cranberries over the sweet potatoes. Drizzle the remaining cider glaze over everything.

Step 7

Return the baking sheet to the oven and roast for an additional 10 minutes, or until the sweet potatoes are tender and caramelized.

Step 8

Transfer the sweet potatoes and cranberries to a serving dish, then spoon any excess glaze from the baking sheet on top for extra flavor.

Step 9

Serve warm and enjoy!
