Ingredients

  • 2 pounds pork loin
  • 2 cups apple cider
  • 3 apples (such as Honeycrisp or Granny Smith)
  • 1 yellow onion
  • 3 garlic cloves
  • 4 sprigs fresh thyme
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground allspice
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 cup chicken stock

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Season the pork loin generously with 1 teaspoon of salt and 0.5 teaspoons of black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.

Step 4

Sear the pork loin on all sides until golden brown, about 3-4 minutes per side. Remove the pork from the skillet and set aside.

Step 5

Peel, core, and slice the apples into 1/4-inch wedges. Thinly slice the onion and mince the garlic cloves.

Step 6

In the same skillet, reduce the heat to medium and add the onions. Cook for 3-4 minutes until they begin to soften.

Step 7

Add the minced garlic and cook for 1 minute until fragrant.

Step 8

Pour in 2 cups of apple cider and scrape the bottom of the pan with a wooden spoon to deglaze.

Step 9

Add the pork loin back into the skillet. Nestle 4 sprigs of fresh thyme around the pork, then pour in 1 cup of chicken stock.

Step 10

Cover the skillet with a lid or tightly with aluminum foil and transfer to the oven. Braise for 40-45 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Step 11

While the pork is braising, melt 2 tablespoons of butter in a large sauté pan over medium heat.

Step 12

Add the sliced apples to the pan along with 0.5 teaspoons of ground cinnamon and 0.25 teaspoons of ground allspice. Cook for 6-8 minutes, stirring frequently, until the apples are golden and tender.

Step 13

Remove the pork from the oven and let it rest for 10 minutes before slicing.

Step 14

Serve the pork loin slices with the sautéed apples and spoon some of the braising liquid over the top. Enjoy!
