Ingredients

  • 1 head green cabbage
  • 2 cups apple cider
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Remove the outer leaves of the cabbage if they're wilted or damaged. Cut the cabbage in half, remove the core, and slice it into thin strips about 1/4 inch thick.

Step 2

Peel and thinly slice the yellow onion.

Step 3

In a large Dutch oven or heavy-bottomed pot, heat the olive oil and butter over medium heat until the butter is melted and shimmering.

Step 4

Add the sliced onion and cook for 5-7 minutes, stirring frequently, until softened and translucent.

Step 5

Stir in the brown sugar, salt, and black pepper, and cook for another minute to caramelize the onions slightly.

Step 6

Add the sliced cabbage to the pot and toss to combine with the onions and seasoning. Cook for 5 minutes, stirring occasionally, until the cabbage begins to wilt.

Step 7

Pour in the apple cider and apple cider vinegar, stirring to distribute the liquid evenly. Bring the mixture to a simmer.

Step 8

Reduce the heat to low, cover the pot with a lid, and simmer for 30-35 minutes, stirring occasionally, until the cabbage is tender and most of the liquid has been absorbed.

Step 9

Taste and adjust the seasoning with additional salt or pepper if needed.

Step 10

Serve warm as a flavorful side dish alongside roasted meats, sausages, or hearty mains.
