Ingredients

  • 6 whole Hatch green chilies
  • 4 medium-sized Tomatillos
  • 1 medium-sized White onion
  • 3 whole Garlic cloves
  • 0.5 cup Cilantro leaves
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 0.25 cup Water
  • 1 tablespoon Vegetable oil

Directions

Step 1

Preheat the broiler in your oven to high, or set up a grill to medium-high heat.

Step 2

Place the Hatch green chilies, tomatillos, and unpeeled garlic cloves on a baking sheet or grill. Roast them for about 8-10 minutes, turning occasionally, until the chilies are charred, the tomatillos are soft, and the garlic skins are browned.

Step 3

Remove the roasted vegetables from the heat and allow them to cool slightly. Once cooled, peel the skin from the Hatch chilies and remove the seeds for a milder salsa. For more heat, leave some of the seeds intact.

Step 4

Peel the roasted garlic cloves and roughly chop the tomatillos and onion.

Step 5

In a blender or food processor, combine the roasted Hatch green chilies, tomatillos, garlic, white onion, cilantro leaves, lime juice, salt, and water.
