Ingredients

  • 5 medium peppers Hatch green chiles
  • 4 medium Tomatillos
  • 2 medium Roma tomatoes
  • 3 pieces Garlic cloves
  • 1 small White onion
  • 0.5 cups Cilantro leaves
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Kosher salt
  • 0.25 cups Water
  • 1 tablespoon Vegetable oil

Directions

Step 1

Preheat your oven's broiler on high.

Step 2

Place the Hatch green chiles, tomatillos, Roma tomatoes, garlic cloves, and the halved white onion on a baking sheet lined with foil.

Step 3

Broil the vegetables for 10-15 minutes, turning them occasionally, until they are charred and softened.

Step 4

Transfer the roasted Hatch chiles to a bowl and cover it tightly with plastic wrap. Let them steam for 10 minutes to loosen the skins.

Step 5

Once cooled, peel the skins off the chiles and remove the stems and seeds. If desired, keep some seeds for extra heat.

Step 6

In a blender or food processor, combine the roasted chiles, tomatillos, tomatoes, garlic, onion, cilantro, lime juice, cumin, salt, and water.

Step 7

Pulse the mixture until you achieve your desired consistency—either smooth or slightly chunky.

Step 8

Heat the vegetable oil in a medium saucepan over medium heat. Pour the blended salsa into the pan and bring it to a simmer.

Step 9

Reduce the heat to low and let the salsa cook for 5 minutes to deepen the flavors.

Step 10

Taste and adjust seasoning if necessary. Serve warm or let it cool and refrigerate for up to 5 days.
