Ingredients

  • 10 medium (about 1 pound) Tomatillos
  • 2 large Jalapeño peppers
  • 1 cup, chopped Fresh cilantro
  • 1 medium, diced Yellow onion
  • 3 large Garlic cloves
  • 1 teaspoon Salt
  • 1 teaspoon Ground cumin
  • 1 cup Sour cream
  • 1 cup Chicken broth
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Fresh lime juice

Directions

Step 1

Peel the husks off the tomatillos and rinse them under warm water to remove any sticky residue. Halve the tomatillos.

Step 2

Slice the jalapeño peppers in half, remove the seeds for less heat if desired, and roughly chop them.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing for 3-4 minutes until softened and fragrant.

Step 4

Add the tomatillos and jalapeños to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatillos begin to soften and release their juices.

Step 5

Pour 1 cup of chicken broth into the skillet and season with 1 teaspoon of salt and 1 teaspoon of ground cumin. Simmer for another 5 minutes, allowing the flavors to meld.

Step 6

Transfer the tomatillo mixture to a blender. Add the fresh cilantro and blend until smooth. Be careful, as the mixture will be hot. Vent the blender lid to release steam if necessary.

Step 7

Return the blended sauce to the skillet over low heat. Stir in 1 cup of sour cream and mix well until the sauce becomes creamy.

Step 8

Add 1 tablespoon of fresh lime juice and adjust seasoning to taste with more salt if necessary. Keep the sauce warm until ready to serve.

Step 9

Use the sauce immediately to top enchiladas, tacos, or grilled meats, or store in an airtight container in the refrigerator for up to 3 days.
