Ingredients

  • 1 cup Water
  • 4 tablespoons Unsalted butter
  • 1 tablespoon Granulated sugar (for dough)
  • 0.5 teaspoon Salt
  • 1 cup All-purpose flour
  • 2 units Large eggs
  • 4 cups Vegetable oil (for frying)
  • 0.5 cup Granulated sugar (for coating)
  • 1 teaspoon Ground cinnamon
  • 6 ounces Dark chocolate (70% cocoa), chopped
  • 0.5 cup Heavy cream
  • 0.5 teaspoon Vanilla extract

Directions

Step 1

In a medium saucepan, combine water, unsalted butter, 1 tablespoon granulated sugar, and salt. Bring to a boil over medium heat, stirring occasionally until butter is melted.

Step 2

Reduce the heat to low and add the all-purpose flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.

Step 3

Remove the dough from the heat and let it cool for 5-7 minutes. Add the eggs, one at a time, mixing thoroughly after each addition until the dough is smooth and glossy.

Step 4

Transfer the dough to a large piping bag fitted with a large star tip (approximately 1/2-inch wide).

Step 5

Heat vegetable oil in a large, heavy-bottomed pot or deep skillet until it reaches 375°F (190°C).

Step 6

Pipe 4-6 inch strips of dough into the hot oil, using scissors or a knife to cut the dough. Fry 3-4 churros at a time to avoid overcrowding, cooking for 2-3 minutes on each side or until golden brown and crispy.

Step 7

Using a slotted spoon, transfer the fried churros to a paper towel-lined plate to drain excess oil.

Step 8

In a shallow dish, mix 1/2 cup granulated sugar and 1 teaspoon ground cinnamon. Roll the warm churros in the cinnamon sugar mixture until fully coated.

Step 9

To prepare the chocolate dipping sauce, place the chopped dark chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 2 minutes.

Step 10

Stir the chocolate and cream mixture until smooth and glossy. Stir in the vanilla extract for added flavor.

Step 11

Serve the warm churros with the chocolate dipping sauce on the side for dunking.
