  • 240 ml Water
  • 60 g Unsalted butter
  • 10 g Granulated sugar
  • 1 pinch Salt
  • 125 g All-purpose flour
  • 2 large Eggs
  • 1000 ml Vegetable oil (for frying)
  • 100 g Sugar (for coating)
  • 5 g Ground cinnamon

Directions

Step 1

In a medium saucepan, combine the water, unsalted butter, granulated sugar, and salt. Heat over medium heat until the butter melts and the mixture comes to a gentle boil.

Step 2

Reduce the heat to low and add the all-purpose flour all at once. Stir vigorously using a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the pan, about 2-3 minutes.

Step 3

Remove the pan from the heat and allow the dough to cool slightly for 5 minutes. This step prevents the eggs from scrambling in the hot dough.

Step 4

Add the eggs one at a time to the dough, beating well after each addition. The dough should become thick, smooth, and glossy.
