Ingredients

  • 150 grams All-purpose flour
  • 250 ml Water
  • 50 grams Unsalted butter
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoons Salt
  • 2 large Eggs
  • 500 ml Vegetable oil (for frying)
  • 100 grams Granulated sugar for coating churros
  • 1 teaspoon Ground cinnamon
  • 200 grams Dark chocolate (70% cocoa or higher)
  • 200 ml Heavy cream
  • 100 ml Whole milk

Directions

Step 1

In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat until the butter has melted completely.

Step 2

Reduce the heat to low, add the flour all at once, and stir vigorously with a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the saucepan.

Step 3

Remove the pan from the heat and let the dough cool for 5-7 minutes. Add the eggs one at a time, stirring well after each addition, until the dough is smooth and glossy. Transfer the mixture to a piping bag fitted with a large star tip.

Step 4

In a large, deep frying pan, heat vegetable oil to 175°C (350°F). Pipe 4-6 inch strips of dough directly into the hot oil, using scissors to cut the ends. Fry in batches, turning occasionally, until golden and crispy (about 2-3 minutes per batch). Remove and drain on paper towels.

Step 5

Mix granulated sugar and ground cinnamon in a shallow dish. Roll the churros in the mixture while they're still warm to ensure the coating sticks.

Step 6

For the chocolate dipping sauce, chop the dark chocolate into small pieces and place them in a heatproof bowl. Heat the heavy cream and whole milk in a small saucepan over medium heat until it just begins to simmer.

Step 7

Pour the hot cream and milk mixture over the chocolate. Let it sit for 1-2 minutes, then whisk until smooth and creamy.

Step 8

Serve the churros warm with the chocolate sauce for dipping.
