Ingredients

  • 1.5 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 0.5 cups Unsalted butter (room temperature)
  • 2 Eggs
  • 0.5 cups Whole milk
  • 2 teaspoons Vanilla extract
  • 1.5 teaspoons Ground cinnamon
  • 1.25 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 2 tablespoons Heavy cream
  • 2 cups Powdered sugar
  • 1 teaspoon Ground cinnamon (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Step 2

In a medium-sized bowl, whisk together the flour, cinnamon, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the butter and granulated sugar together using a hand or stand mixer on medium speed until the mixture is light and fluffy (about 2-3 minutes).

Step 4

Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.

Step 5

Reduce the mixer to low speed and alternately add the dry ingredients and milk in three batches, starting and ending with the dry ingredients. Mix just until combined, being careful not to overmix.

Step 6

Divide the batter evenly between the cupcake liners, filling each about two-thirds full.

Step 7

Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 8

Remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

While the cupcakes are cooling, prepare the frosting. Beat the butter on medium speed until smooth and creamy, then gradually add the powdered sugar, cinnamon, and heavy cream. Mix on high speed until the frosting is fluffy and well combined.

Step 10

Once the cupcakes are completely cool, frost them using a piping bag with your desired tip or a spatula.

Step 11

Optional: Dust with additional cinnamon-sugar or garnish with small churro bites for added flair. Serve and enjoy!
