  • 1.5 pounds ground beef
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1.5 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 0 sour cream (optional, for serving)
  • 0 shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and green bell pepper, and sauté for 5-7 minutes until softened.

Step 3

Stir in the minced garlic and cook for 30 seconds until fragrant.

Step 4

Add the ground beef to the pot. Cook, breaking it up with a wooden spoon, until browned and no pink remains. Drain any excess fat if necessary.

Step 5

Pour in the canned diced tomatoes (with their juice), tomato sauce, and beef broth. Stir to combine.

Step 6

Add the black beans and kidney beans to the pot, stirring gently to mix.

Step 7

Season with chili powder, ground cumin, paprika, oregano, cayenne pepper (if using), salt, and black pepper.

Step 8

Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasonings as necessary.

Step 10

Serve hot, garnished with chopped fresh cilantro. Optionally, top with sour cream and shredded cheddar cheese for added richness.
