Ingredients

  • 1.5 pounds ground turkey
  • 2 tablespoons olive oil

  • 3 cloves garlic, minced
  • 28 ounces canned diced tomatoes (with juice)
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned corn, drained
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup chicken or vegetable broth
  • 0.25 cup fresh cilantro, chopped (optional for garnish)
  • 0.5 cup shredded cheddar cheese (optional for serving)
  • 0.25 cup sour cream (optional for serving)

Directions

Step 1

Heat a large skillet over medium heat and add olive oil.

Step 2

Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

Step 3

Transfer the cooked turkey to the crock pot, leaving the juices in the skillet.
