Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 1 pound ground lamb
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1.5 cups beef broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 4 russet potatoes, peeled and diced
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion, carrots, and celery, and cook for 5-7 minutes until softened. Stir in the minced garlic and cook for 1 more minute.

Step 3

Add the ground beef and ground lamb to the skillet. Cook until browned, breaking up the meat with a spoon as it cooks. Drain any excess grease if needed.

Step 4

Stir in the tomato paste and Worcestershire sauce, coating the meat and vegetables evenly. Cook for 2 minutes to develop flavor.

Step 5

Pour in the beef broth and bring the mixture to a simmer. Let it cook for 10-15 minutes, stirring occasionally, until the liquid has reduced slightly and the mixture has thickened. Remove from heat and stir in the frozen peas and corn. Set aside.

Step 6

Place the diced potatoes in a large pot and cover them with water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Step 7

Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper. Mash until smooth and creamy.

Step 8

Spread the meat mixture evenly into a 9x13-inch baking dish. Carefully spread the mashed potatoes over the top, using a spoon to create an even layer. Use a fork to create small ridges on the surface for extra crispiness if desired.

Step 9

Place the baking dish in the oven and bake for 25-30 minutes, or until the mashed potatoes are golden brown on top and the filling is bubbling around the edges.

Step 10

Remove from the oven and let cool for 10 minutes before serving. Enjoy your Chunky Shepherd's Pie!
