Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes (canned)
  • 14.5 ounces diced tomatoes (canned, drained)
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 0.25 cup water (optional, for adjusting consistency)

Directions

Step 1

Heat olive oil in a large saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté for 5-7 minutes, or until translucent.

Step 3

Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Step 4

Add the crushed tomatoes, drained diced tomatoes, and tomato paste to the saucepan, stirring to combine.

Step 5

Sprinkle in the dried oregano, dried basil, dried thyme, red pepper flakes, sugar, salt, and black pepper. Stir well.

Step 6

Bring the sauce to a gentle simmer over medium heat, then reduce the heat to low and let it simmer uncovered for 25-30 minutes, stirring occasionally to prevent sticking.

Step 7

If the sauce is too thick for your liking, stir in up to 1/4 cup of water, a little at a time, until the desired consistency is reached.

Step 8

Stir in the fresh parsley and fresh basil during the last 5 minutes of cooking.

Step 9

Remove the sauce from heat and let it cool slightly. Use immediately on pizza dough or store in an airtight container for up to 5 days in the refrigerator.
