Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 4 medium potatoes, peeled and cut into large cubes
  • 1.5 pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • 4 cups beef broth
  • 1 15-ounce can crushed tomatoes
  • 2 bay leaves
  • 2 teaspoons fresh thyme
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the diced onion and cook, stirring occasionally, until translucent, about 3-4 minutes. Add the minced garlic and cook for 1 minute until fragrant.

Step 3

Add the beef stew meat to the pot. Sear on all sides until browned, about 5 minutes.

Sprinkle the flour over the beef and stir well to coat. Cook for another 2 minutes to remove the raw flour taste.
