  • 500 grams Button mushrooms (sliced)
  • 250 grams Cremini mushrooms (sliced)
  • 1 medium White onion (finely chopped)
  • 2 medium Carrots (diced)
  • 2 Celery stalks (diced)
  • 3 Garlic cloves (minced)
  • 4 cups Vegetable broth
  • 3 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1 cup Heavy cream
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add the sliced button and cremini mushrooms. Sauté for about 5–7 minutes until mushrooms release most of their moisture and brown slightly. Transfer to the slow cooker.

Step 2

In the same skillet, melt 3 tablespoons of butter. Add the chopped onion, garlic, carrots, and celery. Sauté for 5 minutes until softened and fragrant. Stir in the flour and cook for an additional minute to create a roux.

Step 3

Slowly whisk in 1 cup of the vegetable broth to the roux, ensuring no lumps remain. Allow the mixture to thicken slightly, then transfer it to the slow cooker.

Step 4

Add the remaining 3 cups of vegetable broth, dried thyme, dried parsley, salt, and pepper to the slow cooker. Gently stir to combine all ingredients.

Cover and cook on low heat for 5–6 hours, or until the vegetables are tender and flavors are well developed.
