Ingredients

  • 2 tablespoons Olive oil
  • 2 pounds Beef chuck roast, cut into bite-sized cubes
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 1 medium Jalapeño pepper, seeded and minced
  • 2 tablespoons Tomato paste
  • 28 ounces Crushed tomatoes
  • 2 cups Beef broth
  • 15 ounces Kidney beans, drained and rinsed
  • 15 ounces Black beans, drained and rinsed
  • 2 tablespoons Chili powder
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 ounce Dark chocolate, chopped
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 0.5 cup Shredded cheddar cheese (optional for garnish)
  • 0.5 cup Sour cream (optional for garnish)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Add the cubed beef chuck roast to the pot in batches, searing until browned on all sides. Remove the beef to a plate and set aside.

Step 3

In the same pot, add the diced onion and cook until softened, about 3-4 minutes.

Step 4

Stir in the minced garlic, red bell pepper, and minced jalapeño. Cook for another 3-4 minutes until the vegetables are fragrant and slightly softened.

Step 5

Add the tomato paste and stir it into the vegetables. Cook for 1-2 minutes to deepen the flavor.

Step 6

Return the seared beef to the pot and pour in the crushed tomatoes and beef broth. Stir to combine.

Step 7

Bring the mixture to a simmer, then reduce the heat to low and cover the pot. Let it cook gently for 1 hour, stirring occasionally to prevent sticking.

Step 8

After 1 hour, stir in the kidney beans, black beans, chili powder, cumin, smoked paprika, oregano, salt, and black pepper.

Step 9

Simmer uncovered for an additional 25-30 minutes, allowing the chili to thicken to your desired consistency.

Step 10

Once the chili has thickened, stir in the chopped dark chocolate until melted and fully incorporated. This adds depth and richness to the flavor.

Step 11

Taste the chili and adjust the seasoning as needed with additional salt or spices.

Step 12

Ladle the chunky cowboy chili into bowls and garnish with chopped cilantro, shredded cheddar cheese, and a dollop of sour cream if desired.
