Ingredients

  • 2 pieces Boneless, skinless chicken breasts

  • 1 teaspoon Ground coriander
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground cayenne pepper
  • 4 cups Chicken broth
  • 2 15-ounce cans Cannellini beans, drained and rinsed
  • 1 cup Frozen corn, thawed
  • 4 ounces Cream cheese, softened
  • 0.5 cup Heavy cream
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 0.5 cup Shredded cheddar cheese (optional)
  • 1 bag Tortilla chips (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with salt and pepper, then add them to the pot. Cook for 4-5 minutes per side, or until golden brown. Remove the chicken from the pot and set aside.

Step 3

Add the remaining tablespoon of olive oil to the pot. Sauté the diced onion for 5 minutes, or until softened.
