  • 2 medium celery stalks (sliced)

  • 8 cups chicken broth
  • 2 medium potatoes (peeled and diced)
  • 2 pieces bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season chicken breasts lightly with salt and pepper. Add them to the pot and sear for 4-5 minutes per side, until golden brown. Remove the chicken from the pot and set aside.

In the same pot, add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes until softened.
