Ingredients

  • 1 medium piece (about 200g) Chicken breast

  • 0.5 teaspoon Black pepper
  • 1 small, diced Onion
  • 2 minced Garlic cloves
  • 1 small, diced Red bell pepper
  • 3 medium, chopped Tomatoes
  • 1 tablespoon Tomato paste
  • 0.5 cup Chicken broth
  • 1 teaspoon Italian seasoning
  • 2 tablespoons, grated (optional) Parmesan cheese
  • 1 tablespoon, chopped (optional) Fresh parsley
  • 200 grams Cooked pasta of choice

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Cut the chicken breast into bite-sized chunks and season with half of the salt and pepper.

Step 3

Add the chicken to the skillet and cook until golden brown on all sides, about 5 minutes. Remove the chicken and set aside.

In the same skillet, add the diced onion and cook until softened, about 3 minutes.

Stir in the minced garlic and cook for another 30 seconds until fragrant.
