  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 3 medium carrots, diced
  • 3 medium celery stalks, diced
  • 1 medium yellow onion, diced
  • 3 pieces garlic cloves, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 piece bay leaf
  • 4 cups egg noodles
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 cups water

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the pot. Sear for 3-4 minutes per side until golden brown. Remove from the pot and set aside.

In the same pot, add the diced carrots, celery, and onion. Sauté for 4-5 minutes until the vegetables start to soften.
