Ingredients

  • 300 g All-purpose flour
  • 180 ml Hot water
  • 2 tbsp Vegetable oil
  • 100 g Scallions (finely chopped)
  • 1 tsp Salt
  • 1 tbsp Sesame oil
  • 100 ml Neutral oil (for frying)
  • 20 g All-purpose flour (for dusting)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour with the hot water gradually, stirring with chopsticks or a fork until the mixture forms a rough dough.

Step 2

Knead the dough on a lightly floured surface for 8–10 minutes until smooth and elastic. Cover it with a damp cloth and let it rest for 30 minutes.

Step 3

Divide the dough into four equal portions. Roll one portion into a thin oval or rectangular sheet, approximately 2 mm thick.

Step 4

Brush the surface of the rolled dough sheet with sesame oil and sprinkle evenly with a pinch of salt and a generous amount of chopped scallions.

Step 5

Roll the sheet tightly into a log from one end, then coil the log into a spiral shape. Tuck the end underneath the coil to secure it.

Step 6

Gently flatten the spiral with your palm, then use a rolling pin to roll it out into a pancake approximately 1/4 inch thick. Repeat with the remaining dough portions.
