  • 3 medium potatoes (peeled and cut into cubes)
  • 2 celery stalks (sliced)
  • 2 tbsp tomato paste
  • 1 15 oz can canned diced tomatoes
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup frozen peas
  • 2 tbsp parsley (chopped, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Season the beef chuck cubes with salt and pepper, then brown them in batches, adding more olive oil as needed. Transfer browned beef to a plate and set aside.

Step 3

In the same pot, reduce heat to medium and add the chopped onion. Sauté for 4-5 minutes until softened.

Add the minced garlic and cook for another 1 minute until fragrant.
