  • 3 stalks celery, sliced
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 14.5 oz can diced tomatoes, canned
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup corn kernels (optional)
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium-high heat.

Step 2

Season the beef cubes with salt and pepper, then sear in batches until browned on all sides. Remove the meat and set aside.

Step 3

In the same pot, add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened.

Add the minced garlic and cook for an additional 1 minute until fragrant.
