Ingredients

  • 2 pounds chuck steak
  • 0.5 cups soy sauce
  • 0.25 cups honey
  • 0.25 cups mirin (or rice wine)
  • 3 pieces garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 stalks green onions, chopped
  • 1 tablespoon sesame seeds
  • 2 tablespoons vegetable oil

Directions

Step 1

In a medium bowl, whisk together soy sauce, honey, mirin, minced garlic, grated ginger, and sesame oil to create the teriyaki marinade.

Step 2

Place the chuck steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or ideally overnight, for maximum flavor.

Step 3

Remove the steak from the marinade and allow it to come to room temperature for about 20 minutes before cooking. Reserve the marinade for later use.

Step 4

Heat a large skillet or grill pan over medium-high heat. Add the vegetable oil and allow it to heat up.

Step 5

Cook the chuck steak for 5-7 minutes on each side, or until it reaches your desired level of doneness (135°F for medium-rare, 145°F for medium). Remove the steak from the skillet, cover loosely with foil, and let it rest for 5-10 minutes.

Step 6

Meanwhile, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat and allow it to cook for 2 minutes.

Step 7

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually whisk the slurry into the simmering marinade. Cook for an additional 2-3 minutes, or until the sauce thickens.

Step 8

Slice the rested chuck steak into thin strips against the grain. Arrange the steak on a serving platter and drizzle with the thickened teriyaki sauce.

Step 9

Garnish with chopped green onions and sesame seeds. Serve immediately with steamed rice or stir-fried vegetables for a complete meal.
