Ingredients

  • 4 pieces rockfish fillets
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons lemon juice
  • 2 pieces garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 4 pieces lemon wedges

Directions

Step 1

Pat the rockfish fillets dry with paper towels and set them aside on a plate.

Step 2

In a small bowl, mix together the paprika, cumin, cayenne pepper, salt, and black pepper.

Step 3

Rub the spice mixture evenly over both sides of the rockfish fillets.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the rockfish fillets to the skillet, skin-side down if applicable.

Step 5

Cook the fillets for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Transfer to a plate and keep warm.

Step 6

In the same skillet, reduce the heat to medium-low and add the remaining tablespoon of olive oil and the butter.

Step 7

Once the butter is melted, add the minced garlic and sauté for 1-2 minutes, until fragrant.

Step 8

Stir in the lemon juice, scraping up any browned bits from the bottom of the skillet to create a flavorful pan sauce.

Step 9

Return the rockfish fillets to the skillet and spoon the sauce over them. Cook for 2 more minutes to let the flavors meld.

Step 10

Transfer the fillets to serving plates, drizzle with the remaining pan sauce, and garnish with fresh parsley.

Step 11

Serve immediately with lemon wedges on the side for squeezing over the fish.
