Ingredients

  • 2 pieces chicken thighs (bone-in, skin-on)
  • 4 pieces chicken wings
  • 1 medium piece carrot
  • 1 piece celery stalk
  • 1 medium piece yellow onion
  • 4 cloves garlic cloves
  • 5 sprigs fresh parsley (optional)
  • 1 piece bay leaf
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon salt
  • 8 cups water

Directions

Step 1

Prepare the ingredients by peeling and roughly chopping the carrot, celery, and onion. Smash the garlic cloves with the flat side of a knife to release their flavor.

Step 2

In a large stockpot, add the chicken thighs, wings, carrot, celery, onion, garlic, parsley (if using), bay leaf, black peppercorns, and salt.

Step 3

Pour in the water, ensuring all the ingredients are submerged. Place the pot over medium-high heat and bring to a gentle boil.

Step 4

Once boiling, reduce the heat to low and simmer the mixture uncovered for 2 hours. Skim off any foam or impurities that rise to the surface periodically.

Step 5

After 2 hours, turn off the heat and carefully remove the chicken pieces with tongs. You can shred and reserve the meat for another use, if desired.

Step 6

Strain the broth through a fine mesh sieve or cheesecloth into a clean bowl or pot to remove the vegetables and other solids.

Step 7

Taste the broth and adjust seasoning with additional salt, if needed.

Step 8

Serve the chicken juice warm in mugs as a flavorful beverage, or store in an airtight container in the refrigerator for up to 4 days or freezer for up to 3 months.
