  • 500 grams all-purpose flour
  • 2 teaspoons salt
  • 250 milliliters water
  • 1 large egg
  • 400 grams ground beef or lamb
  • 1 medium, finely chopped onion
  • 1 teaspoon ground black pepper
  • 1 teaspoon cumin
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons butter
  • 1 liter optional broth or stock
  • 200 grams yogurt
  • 2 cloves, minced garlic

Directions

Step 1

In a large mixing bowl, combine the flour, 1 teaspoon of salt, and the egg. Gradually add the water, mixing to form a dough. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.

Step 2

In a separate bowl, mix the ground beef or lamb with the chopped onion, remaining teaspoon of salt, black pepper, cumin, and parsley. Stir the filling until all ingredients are fully incorporated.

Step 3

Divide the dough into four equal portions. Roll out each portion into a thin sheet on a lightly floured surface. Cut the dough into small squares, about 4 cm on each side.

Place a small amount of meat filling in the center of each square. Fold the dough over to form a triangle, then press the edges firmly to seal, ensuring there are no air bubbles trapped inside.
