  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Ground ginger
  • 3 Eggs, large
  • 0.75 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 2 cups Zucchini, grated
  • 0.5 cups Chopped walnuts (or pecans)
  • 0.5 cups Dried cranberries (or raisins)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 8x4-inch loaf pans or line them with parchment paper.

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
