Ingredients

  • 2 large red bell peppers
  • 2 large green bell peppers
  • 1 large yellow bell pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon parsley

Directions

Step 1

Wash the red, green, and yellow bell peppers thoroughly under running water. Pat them dry with a clean kitchen towel.

Step 2

Cut off the tops of the bell peppers and remove the seeds. Slice the peppers into thin strips of approximately 1/2 inch wide.

Step 3

Peel and finely mince the garlic cloves.

Step 4

Heat a large skillet over medium heat and add the olive oil.

Step 5

Once the oil is hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.

Step 6

Add the sliced bell peppers to the skillet. Stir to coat the peppers evenly with the olive oil and garlic.

Step 7

Sprinkle in the dried oregano, dried thyme, salt, and black pepper. Stir to combine the seasonings with the peppers.

Step 8

Cook the peppers for about 10-12 minutes, stirring occasionally, until they are tender yet slightly crisp. Adjust the heat as needed to prevent scorching.

Step 9

Once cooked, transfer the sautéed peppers to a serving dish and sprinkle with freshly chopped parsley for a festive touch.

Step 10

Serve warm as a side dish alongside your Christmas meal, or enjoy them on top of toasts or mixed into pasta for a versatile option!
