Ingredients

  • 1 piece pre-made pie crust
  • 6 pieces large eggs
  • 1 cup heavy cream
  • 0.5 cup milk
  • 2 cups fresh spinach, chopped
  • 0.75 cup roasted red peppers, diced
  • 1.5 cups Gruyère cheese, shredded
  • 0.5 cup green onions, sliced
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.125 teaspoon nutmeg, freshly grated
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the pre-made pie crust into a 9-inch pie dish. Crimp the edges as desired and set aside.

Step 2

In a large skillet over medium heat, add the olive oil. Once hot, sauté the minced garlic for 1 minute until fragrant.

Step 3

Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and allow it to cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs, heavy cream, and milk until fully combined.

Step 5

Stir in the Gruyère cheese, diced roasted red peppers, sliced green onions, salt, black pepper, and nutmeg.

Step 6

Once the spinach has cooled slightly, fold it into the egg mixture and stir to combine.

Step 7

Pour the mixture into the prepared pie crust, spreading it out evenly.

Step 8

Place the quiche in the oven and bake for 35-40 minutes, or until the filling is set and the top is lightly golden. A toothpick inserted into the center should come out clean.

Step 9

Remove the quiche from the oven and let it cool for 10 minutes before slicing.

Step 10

Serve warm or at room temperature for a festive and delicious Christmas breakfast or brunch!
