Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoon Ground cloves
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.75 cup Brown sugar, packed
  • 1 large Egg
  • 0.33 cup Molasses
  • 1 teaspoon Vanilla extract
  • 1 cup Powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, cloves, nutmeg, black pepper, and salt. Set aside.

Step 3

In a large bowl, using an electric mixer, cream together the softened butter and brown sugar until light and fluffy, about 2–3 minutes.

Step 4

Add the egg, molasses, and vanilla extract to the butter mixture, and beat until fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a cohesive dough forms. The dough will be slightly sticky.

Step 6

Using a tablespoon or a small cookie scoop, roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake the cookies in preheated oven for 10–12 minutes, or until they are puffed and slightly cracked on top.

Step 8

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Once the cookies are cool, place the powdered sugar in a shallow bowl. Roll each cookie in the powdered sugar until fully coated.

Step 10

Store cookies in an airtight container at room temperature for up to one week, or freeze for longer storage.
