Ingredients

  • 227 grams unsalted butter
  • 100 grams granulated sugar
  • 2 teaspoons vanilla extract
  • 250 grams all-purpose flour
  • 24 pieces whole almonds
  • 100 grams milk chocolate chips
  • 24 pieces small red candies (e.g., red mini M&Ms)
  • 24 pieces licorice strings
  • 48 pieces mini chocolate chips

Directions

Step 1

Preheat your oven to 160°C (325°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream the butter and sugar together until light and fluffy using a hand or stand mixer on medium speed.

Step 3

Add the vanilla extract and mix to combine.

Step 4

Gradually add the flour into the mixture in small increments, mixing until just incorporated. Do not overmix.

Step 5

Form the dough into small balls, roughly 1 tablespoon each, and gently flatten them to create an oval or teardrop shape for the mouse's body.

Step 6

Place one almond partially into the rounded end of each dough ball to represent the mouse's nose.

Step 7

Arrange the cookies on the prepared baking sheets, leaving some space between them.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the edges just begin to turn golden. Remove from the oven and allow cookies to cool completely on a wire rack.

Step 9

While the cookies are cooling, melt the chocolate chips in a microwave-safe bowl in 15-second intervals, stirring in between, until smooth.

Step 10

Use a toothpick or small piping bag to apply a tiny drop of melted chocolate near the almond (mouse nose) and stick a small red candy to create a festive nose.

Step 11

Apply two small melted chocolate dots behind the red candy and attach mini chocolate chips as eyes.

Step 12

Use a drop of melted chocolate to affix licorice strings to the back of the cookie as the mouse's tail.

Step 13

Allow the chocolate to set completely before serving or storing in an airtight container.
