Ingredients

  • 900 g green beans, trimmed and cut into 2-inch pieces
  • 45 g unsalted butter
  • 1 large yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 300 g mushrooms, finely chopped
  • 30 g all-purpose flour
  • 500 ml chicken or vegetable stock
  • 250 ml heavy cream
  • 15 ml soy sauce
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 200 g french fried onions
  • 1 tsp olive oil (for greasing the dish)

Directions

Step 1

Preheat your oven to 190°C (375°F). Lightly grease a 9x13-inch baking dish with olive oil and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 3-4 minutes until just tender. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.

Step 4

Add the minced garlic and chopped mushrooms. Cook for an additional 4-5 minutes, stirring occasionally, until the mushrooms release their liquid and start to brown.

Sprinkle the flour evenly over the vegetables and stir to coat. Cook for 1 minute to remove the raw flavor of the flour.

Gradually pour in the chicken or vegetable stock while whisking to create a smooth sauce. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
