Ingredients

  • 200 grams Cream cheese
  • 150 grams Mascarpone cheese
  • 75 grams Dried cranberries
  • 50 grams Chopped dried apricots
  • 50 grams Golden raisins
  • 50 grams Shelled pistachios
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 60 ml Sweet chilli sauce
  • 5 grams Fresh parsley (for garnish)
  • 100 grams Crackers or bread slices (for serving)

Directions

Step 1

In a large mixing bowl, combine the cream cheese and mascarpone cheese. Use a spatula to mix until smooth and creamy.

Step 2

Fold in the dried cranberries, chopped dried apricots, golden raisins, and shelled pistachios. Make sure the fruit and nuts are evenly distributed throughout the cheese mixture.

Step 3

Add the ground cinnamon and ground nutmeg, and gently mix to incorporate the spices.

Step 4

Line a small pudding bowl or a round mold with plastic wrap, ensuring there is enough overhang to fully cover the top of the mixture.

Step 5

Spoon the cheese and fruit mixture into the prepared bowl, pressing down gently to eliminate air pockets and create a smooth surface.

Step 6

Fold the plastic wrap over the top of the mixture to cover it completely, then refrigerate for at least 2 hours to allow the flavors to meld and the cheese to firm up.

Step 7

When ready to serve, carefully unwrap the plastic and invert the cheese pudding onto a serving plate.

Step 8

Drizzle the sweet chilli sauce over the top of the cheese pud, letting it cascade down the sides for a festive presentation.

Step 9

Garnish with a sprinkle of fresh parsley for a pop of color.

Step 10

Serve with crackers or slices of bread on the side for dipping or spreading.
