  • 1 lb Ground beef (80% lean)
  • 0.5 lb Ground pork

  • 2 tbsp Milk
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 12 oz Spaghetti
  • 3 cups Marinara sauce
  • 6 cups Water
  • 1 tbsp Salt for pasta water

Directions

Step 1

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan, minced garlic, egg, milk, chopped parsley, salt, and black pepper.

Mix the ingredients gently with your hands until just combined. Do not overmix, to keep the meatballs tender.

Step 3

Using your hands, form the mixture into golf-ball-sized meatballs. You should get around 16 meatballs.

Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking them for 2-3 minutes on each side, until browned all over. They do not need to be cooked through at this stage. Remove the browned meatballs and set them aside on a plate.

In the same skillet, add the marinara sauce and heat it over medium heat until it begins to simmer.

Step 6

Gently add the meatballs to the marinara sauce, ensuring they are submerged. Reduce the heat to low, cover the skillet, and let the meatballs simmer for 20-25 minutes, stirring occasionally.

Meanwhile, bring a large pot of water to a boil. Add 1 tablespoon of salt and the spaghetti to the boiling water. Cook according to package directions until al dente, about 8-10 minutes.

Drain the spaghetti and return it to the pot. Add a ladle of marinara sauce (without the meatballs) to the spaghetti and toss to coat.
