Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (10.5 ounces) cream of celery soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (32 ounces) frozen tater tots
  • 1 tablespoon vegetable oil
  • 2 tablespoons chopped parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or a light coat of vegetable oil.

Step 2

Heat a large skillet over medium heat. Add the vegetable oil, diced onion, and garlic. Cook for 2-3 minutes until the onion is softened and translucent.

Step 3

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.

Step 4

Season the cooked beef mixture with salt and black pepper, then transfer it to the prepared baking dish, spreading it evenly to create the first layer.

Step 5

In a medium mixing bowl, combine the cream of mushroom soup, cream of celery soup, and sour cream. Mix until smooth and pour the mixture over the beef layer in the baking dish.

Step 6

Sprinkle 1 1/2 cups of shredded cheddar cheese evenly over the soup layer.

Step 7

Arrange the frozen tater tots in a single layer on top of the cheese, covering the entire surface of the casserole.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crisp.

Step 9

Remove the casserole from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top. Return to the oven for 5 minutes, or until the cheese is melted.

Step 10

Garnish with chopped parsley, if desired, and let the casserole cool for 5 minutes before serving. Enjoy!
