Ingredients

  • 3 oz Cherry gelatin mix
  • 2 cups Boiling water
  • 1 cup Cold water
  • 8 oz Crushed pineapple (with juice)
  • 1 cup Maraschino cherries (halved, drained)
  • 1 tsp Zest of orange
  • 1 cup Heavy whipping cream
  • 2 tbsp Powdered sugar

Directions

Step 1

In a large mixing bowl, dissolve the cherry gelatin mix in 2 cups of boiling water. Stir for about 2 minutes, or until the gelatin is completely dissolved.

Step 2

Stir in 1 cup of cold water to cool the mixture slightly.

Step 3

Add the crushed pineapple (with juice) and the halved maraschino cherries to the gelatin mixture. Stir gently to combine.

Step 4

Mix in the orange zest for a zingy citrus note.

Step 5

Pour the mixture into a 9x9-inch glass dish or a decorative bowl. Cover and refrigerate for at least 4 hours, or until fully set.

While the jello sets, prepare the whipped cream. In a chilled bowl, whip the heavy cream with powdered sugar using a hand mixer or whisk until soft peaks form.

Once the jello is set, spoon portions into dessert bowls and top with a dollop of fresh whipped cream.

Step 8

Serve chilled and enjoy Chris's Favorite Cherry Jello!
