Ingredients

  • 8 oz egg noodles
  • 1 lb meat of choice (chicken, beef, shrimp, or tofu)
  • 3 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 small onion, thinly sliced
  • 2 cups green cabbage, shredded
  • 1 cup carrots, julienned
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp dark soy sauce (optional, for color)
  • 1 tsp sesame oil
  • 2 stalks green onions, sliced
  • 1 cup bean sprouts (optional)
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Cook the egg noodles according to package instructions. Drain, rinse with cold water, and set aside.

Step 2

Slice your meat of choice (chicken, beef, or tofu) into thin strips or clean and devein shrimp. Season lightly with a pinch of salt and black pepper.

Step 3

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the meat and stir-fry for 3-4 minutes until fully cooked. Remove from the pan and set aside.

Step 4

In the same wok, heat another 2 tablespoons of vegetable oil. Add the minced garlic and ginger, and stir-fry for 30 seconds until fragrant.

Step 5

Add the sliced onion, shredded cabbage, and julienned carrots. Stir-fry for 2-3 minutes until the vegetables are just tender but still crisp.

Return the cooked meat to the wok and mix with the vegetables.

Add the drained noodles to the wok. Toss everything gently to combine.

In a small bowl, mix soy sauce, oyster sauce, dark soy sauce (if using), and sesame oil. Pour this sauce mixture over the noodles and stir to coat evenly.

Add bean sprouts if using and stir-fry for another 1-2 minutes until everything is heated through.
