  • 1 tablespoon celery seeds
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon cayenne pepper (optional)

Directions

Step 1

In a large bowl, combine the chopped green tomatoes, green bell peppers, red bell peppers, onions, and shredded cabbage.

Step 2

Sprinkle the salt over the vegetables and toss to combine. Let the mixture sit for at least 1 hour to draw out excess moisture.

Step 3

After 1 hour, drain the vegetables in a colander and rinse well under cold water. Let the vegetables drain thoroughly while you prepare the brine.

In a large pot, combine the apple cider vinegar, granulated sugar, mustard seeds, celery seeds, turmeric, allspice, and cayenne pepper (if using). Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
