  • 2 medium chayote squash (chow chow)
  • 3 small heads bok choy
  • 1 tablespoon ginger

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon red chili flakes
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water
  • 1 teaspoon sesame seeds (optional, for garnish)

Directions

Step 1

Peel the chayote squash, cut in half, and remove the seed. Slice it thinly into bite-sized pieces.

Step 2

Wash the bok choy thoroughly and slice the leaves and stems into 2-inch pieces.

Step 3

Peel and finely grate the ginger. Mince the garlic cloves.

Step 4

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the garlic and ginger to the pan and sauté for 30 seconds, stirring constantly, until fragrant.
