Ingredients

  • 125 ml Water
  • 125 ml Whole milk
  • 100 g Unsalted butter
  • 1 tsp Salt
  • 1 tbsp Granulated sugar
  • 150 g All-purpose flour
  • 4 Large eggs
  • 100 g Pearl sugar

Directions

Step 1

Preheat the oven to 220°C (425°F). Line two baking sheets with parchment paper.

Step 2

In a medium saucepan, combine the water, milk, butter, salt, and sugar. Heat over medium heat until the butter is melted and the mixture comes to a rolling boil.

Step 3

Remove the saucepan from the heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Return the saucepan to low heat and stir for another 2 minutes to dry out the dough slightly. The dough should form a smooth ball.

Step 5

Transfer the dough to a large mixing bowl. Allow it to cool for about 5 minutes.

Add the eggs one at a time, beating well after each addition, until the dough is smooth and glossy. The dough should be thick but fall slowly from the spoon.

Spoon or pipe the dough onto the prepared baking sheets in small mounds, spacing them about 2 inches apart.

Sprinkle pearl sugar generously over each mound of dough.

Step 9

Bake in the preheated oven for 10 minutes. Then, reduce the oven temperature to 190°C (375°F) and bake for an additional 20 minutes, or until the chouquettes are golden brown and crisp.

Turn off the oven and leave the oven door slightly ajar. Allow the chouquettes to sit in the oven for 5 minutes to dry out further.

Step 11

Remove from the oven and transfer to a wire rack to cool completely. Serve warm or at room temperature.
