Ingredients

  • 400 g Penne pasta
  • 250 g Chorizo sausage
  • 2 tbsp Olive oil
  • 1 large Onion
  • 2 Garlic cloves
  • 1 large Red bell pepper
  • 400 g Canned chopped tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 200 g Mozzarella cheese
  • 50 g Parmesan cheese
  • 2 tbsp Fresh parsley

Directions

Step 1

Preheat your oven to 200°C (392°F) or 180°C (356°F) for fan-assisted ovens.

Step 2

Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente according to the package instructions. Drain and set aside.

Step 3

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 4

Slice the chorizo into thin rounds and add it to the skillet. Cook for 4-5 minutes until lightly browned and the fat has rendered out. Remove the chorizo from the skillet and set aside.

Finely chop the onion and garlic, and dice the red bell pepper. Add them to the skillet with the chorizo oil and sauté for 5-7 minutes until softened.
