Ingredients

  • 200 grams chorizo sausage
  • 8 large eggs
  • 60 ml whole milk
  • 1 medium red bell pepper
  • 1 medium yellow onion
  • 75 grams baby spinach
  • 1 tablespoon olive oil
  • 100 grams shredded cheddar cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the chorizo into small pieces and set aside. Dice the red bell pepper and yellow onion into small, even pieces.

Step 3

In a medium-sized oven-safe skillet, heat the olive oil over medium heat. Add the chorizo and cook for 4-5 minutes, stirring occasionally, until it releases its oils and begins to brown.
