Ingredients

  • 1 lb chorizo sausage
  • 1 lb ground beef
  • 1 large yellow onion
  • 1 large bell pepper (any color)
  • 4 garlic cloves
  • 28 oz diced tomatoes (with juices)
  • 15 oz kidney beans (drained and rinsed)
  • 15 oz black beans (drained and rinsed)
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 0 shredded cheddar cheese (optional, for serving)
  • 0 sour cream (optional, for serving)
  • 0 chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Remove the casing from the chorizo sausage, if applicable, and add it to the pot along with the ground beef. Cook, breaking them apart with a wooden spoon, until browned, about 8–10 minutes.

Step 3

Dice the yellow onion and bell pepper, and mince the garlic cloves. Add the onion and bell pepper to the pot and cook for 5 minutes, or until softened.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Add the chili powder, ground cumin, paprika, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper to the pot. Stir to evenly coat the mixture in the spices.

Step 6

Add the tomato paste to the pot and stir, cooking for 2 minutes to deepen the flavor.

Step 7

Pour in the diced tomatoes (with their juices) and beef broth. Stir everything together, scraping the bottom of the pot to lift any browned bits.

Step 8

Bring the mixture to a simmer, then reduce the heat to low. Cover partially with a lid and let it cook for 30 minutes, stirring occasionally.

Step 9

After 30 minutes, add the kidney beans and black beans to the chili. Stir to incorporate, then continue to simmer uncovered for another 30 minutes, or until the chili has thickened to your desired consistency.

Step 10

Taste and adjust the seasoning if needed (e.g., more salt, pepper, or spice).

Step 11

Serve hot in bowls, optionally garnished with shredded cheddar cheese, sour cream, and chopped cilantro.
